This Sunday is National Siblings Day and there are few better ways to celebrate than with food! Here is our weekend recipe guide for ideas on what to cook for (or with) some of your favorite people.

  • Baked Salmon with Grapefruit Salad (courtesy of themodernproper.com)

Ingredients

  • 3/4 lb. fresh salmon filet

  • 1 Avocado, cubed

  • 1 Grapefruit, peeled, segmented

  • 4 cups Loosely packed mache (or other spring greens)

  • 1 Lemon

  • Honey mustard vinaigrette

  • Salt and pepper

Directions

  1. Preheat oven to 350°. Place the salmon on a parchment lined baking sheet. Season it with salt and pepper. Bake for 15 minutes or until opaque and flakes easily with a fork.

  2. While the salmon is baking use a paring knife to peel the grapefruit by cutting away skin and slicing each wedge away from the inner white skin.

  3. Assemble salad on each plate by layering greens, avocado and grapefruit wedges and dress lightly with vinaigrette. Divide the salmon into two pieces and dress with lemon juice, plate and serve along side the salad.

Ingredients

  • Ten 8-10” flour tortillas

  • 1 cup Mozzarella, grated

  • 1 cup Pepper jack cheese, grated

  • 2 Large avocados, thinly sliced

  • ½ cup Green onions, minced

Jalapeño Ranch

  • ½ cup Mayonnaise

  • ½ cup Sour cream

  • 1 tsp Onion powder

  • 1 tsp Garlic powder

  • ½ tsp Salt

  • ¼ cup Cilantro, finely minced

  • 1/2 cup Pickled jalapeños, drained

  • 2 tbsp Lime juice

Directions

  1. Preheat the oven to 425°F.

  2. On a large greased baking sheet arrange six tortillas around the perimeter so that half of each tortilla is hanging over the edge. Fill the middle of the baking sheet with two more tortillas (See step by step photos).

  3. Top with grated cheese followed by sliced avocados and green onions.

  4. Fold the overhanging tortilla into the center to cover the filling and finish off with two more tortillas over the center. Generously brush or spray tortillas with oil and place a second (oiled underneath) baking sheet on top of tortillas to keep tortillas flat while baking. Bake for 20 minutes covered, followed by 5 minutes uncovered or until golden and crispy.

  5. While quesadilla is cooking make the jalapeño ranch by blending all ingredients together using either an immersion blender, blender or food processor.

  6. Cut quesadilla into large squares and serve dipped into jalapeño ranch.

Ingredients

  • 8-10 New potatoes, (or other waxy potato) cut into quarters

  • 2 tbsp Olive oil

  • 1 tsp Kosher salt, divided

  • 2 lbs Boneless, skinless chicken thighs

  • 1 Small red onion, cut lengthwise into 8 wedges

  • 2 cups Olive bar offerings (peppers, olives, roasted garlic, marinated artichoke hearts etc.)

  • ½ tsp Pepper

  • 1 tsp Onion powder

  • 1 Lemon

Directions

  1. Heat oven to 375° F.

  2. Spread the potatoes onto a large rimmed baking sheet. Drizzle with 1 tablespoon olive oil and ½ teaspoon salt. Toss to coat. Cook on center rack for 15 minutes.

  3. Remove potatoes from oven. Nestle in chicken thighs, onions and olive bar offerings. Drizzle with remaining olive oil and sprinkle with pepper, onion powder and remaining salt. Set on center rack and bake for 35 minutes longer until the chicken is cooked through.

  4. Squeeze lemon juice over finished sheet pan and serve.
